Traditionally, bhetki fish is used to make Bengali-style fish fry but this recipe uses Basa fillet, which is commonly available everywhere in India. The fish fillet is marinated in a medley of flavourful spices before crumb-frying it. Crumbing is the process of coating the food with all-purpose flour (maida), eggs and bread crumbs. This helps in giving a crunchy and crispy exterior to any food that is later fried. Pair this fish fry with kasundi or Bengali-style mustard sauce that will give you the real experience of eating authentic fish food.
