Achar (or pickle) is probably one of the most underrated food items in a traditional Indian thali. A spicy accompaniment to pair with rice, roti, paratha etc, achar holds a constant position in our everyday diet. But we hardly give the dish its due credit. If you explore the diverse food culture in the country, you will find each region has something unique to offer. What remains common among all is pickle! In the North Indian cuisine, you will find gajar ka achar, lehsun ka achar and more, whereas, South Indian cuisine offers pachadi (fresh chutney), inji puli et al. Then in the Bengali food culture, you will find achar with sweet-and-sour flavour profile. It, in fact, fascinates us to see how varied a humble achar recipe can be.
According to food experts, pickling (process of making achar) in India is more of a tradition; this is why you will find achar in every household taste unique. Take hari mirch ka achar (green chilli pickle) for instance. Some like making stuffed achar with masala filling inside the green chillies; whereas some people enjoy semi-dry achar made with thin, small chillies. Green Chilli Pickle: How To Make Instant Hari Mirch Ka Achar In 15 Minutes:
Start with cleaning the green chillies and pat them dry. Then slice the chilli and keep aside.
In the next step, heat a pan, add fennel seeds, cumin seeds, fenugreek seeds and mustard seeds in a pan and roast on low flame. Once the spices release aroma, turn off the flame. Transfer the masala in a grinding jar and grind into coarse powder.
Heat a pan, add half cup of mustard oil and heat it well. Turn off the flame and let it cool.
In a bowl, take chopped green chillies, turmeric powder, kalonji, hing, salt and Kashmiri red chilli powder. Then add roasted masala, white vinegar and mustard oil and mix everything well. And your achar is ready to be stored.
How To Store Green Chilli Achar:
- Take a glass jar and clean it dry.
- Burn a charcoal on low flame and place it on a plate.
- Sprinkle some hing on the charcoal.
- Cover the smoked charcoal with the glass jar and keep for a minute.
- Now, store the achar in the jar.
