Ingredients of Afghani Parda Pulao

  • 500 gms Mutton Pieces
  • 1 and a half cup Basmati Rice (soaked)
  • 2 tbsp Ghee
  • 1 tbsp Almonds paste
  • 1 tsp Garam Masala
  • 1 tsp Coriander Powder
  • 1 tbsp Ginger garlic paste
  • 1 medium Onion (Sliced)
  • 2 Green Cardamom
  • 1 Black Cardamom
  • 4-5 Cloves
  • 10 (Black peppercorns
  • 1 tsp Cumin Seeds
  • 1 inch Cinnamon stick
  • 2 Bay leaves
  • 2-3 Green chillies
  • 1 tsp Fennel seeds
  • 1 tbsp Lemon Juice
  • As Required Water
  • For Dough Covering
  • 2 tsp Cheeni (Sugar)
  • 2 cup All-purpose flour
  • 1 tsp Cooking oil
  • to taste Salt
  • Onion (Fried)
  • 1/4 tsp Black sesame seeds
  • Milk
  • 1/2 cup Lukewarm water

How to Make Afghani Parda Pulao

Take a pot, add ghee and wait until it melts properly. Now add whole spices like cardamom, black peppercorns, cumins, cinnamon, green cardamom and black cardamom. Let them splutter. Now, add onion and fry until golden.

The next step is to add mutton mix boti and mix well until it changes colour. Add ginger-garlic paste, green chillies, fennel seeds powder, coriander powder, salt and mix everything.

Add water, mix well and bring it to a good boil, cover and cook on low flame for 1 hour or until meat is tender. Once done, take out cooked meat in a bowl & set aside.

For rice, take a pot, add rice, water, mix well and bring it to boil,cook until water is reduced. Cover and cook on low flame until 3/4th done & set aside.

In wok, add ghee and let it melt. Add onion and fry until golden brown. Add green chillies,yogurt and mix well.

Add cashew nuts paste, almond paste and mix well.
7.
Add garam masala powder, salt, lemon juice, mix well and cook for 2-3 minutes.
8.
Now add cooked meat and mix well.
9.
Add water,mix well and cook on high flame until oil separates & set aside.

For dough

1.
In bowl,add instant yeast,sugar,lukewarm water and mix well,let it rest for 10 minutes. Add all-purpose flour and salt, mix well and knead until dough is formed.

Grease dough with oil, cover and let it rest for 50 minutes. Add cooking oil and knead dough again.
3.
Sprinkle flour and roll out with the help of rolling pin (18x18 inches) (in a circular motion) and fold.

In bowl,place folded dough and spread evenly.
5.
Add cooked rice, cooked meat, fried onion, cooked rice and spread evenly.
6.
Add fried onion and fold the edges to close and grease with oil then flip on baking tray (10x10 inches).
7.
Apply milk on dough with the help of the brush and sprinkle black sesame seeds.
8.
The last step is to bake in preheated oven at 180 C for 10-15 minutes.
