A creamy chicory, cucumber and green peas soup.

Ingredients of Chicory Soup

  • Chicory 1 medium size
  • Cucumber half (optional)
  • Mustard seeds 1 tsp
  • Green peas split 3-4 tbsp. (soaked in water for one hour)
  • Garam masala 1/2 tsp
  • Salt to taste
  • Turmeric pinch
  • Tamarind 1 tsp paste or mango powder (optional)
  • Olive oil 1 tbsp
  • Garlic 1 tbsp chopped

How to Make Chicory Soup

  • 1.Heat oil in a pan and then add garlic.
  • 2.Stir and then add garam masala and turmeric.
  • 3.To this add chopped chicory and cucumber and green peas.
  • 4.Add about half cup of water and cook on medium flame for about 10 min.
  • 5.When peas are somewhat soft add tamarind paste. Cook for another 5-8 minutes.
  • 6.Note: Chicory has bitter taste so it can be cooked separately in hot water for 3-4 minutes before adding to the soup.
