- 5 tbsp Butter
- 5 tbsp Honey
- 1/2 cup Sugar
- 3/4 cup Desiccated coconut
- 2 tbsp Instant coffee powder
- Vegetable oil, for greasing

Cut butter into bits and place it in the freezer.
Dissolve instant coffee powder in 3 tbsp of hot water.
In a saucepan, stir sugar and honey until the mixture is golden and caramelised.
Remove the pan from the heat and gradually add butter, stirring well. Stir in coffee and desiccated coconut.
Brush 4 x 8 inch loaf pan with oil, pour in the mixture and cut into 1-inch squares.
