About Coconut Pancake Recipe: A colourful twist to your usual breakfast staple, pancakes! Coconut pancake is a great option to prepare for your next breakfast since it is made with coconut milk and is absolutely sugar-free besides being super easy and quick to prepare at home.

Ingredients of Coconut Pancake

  • 1 all purpose flour
  • 1/4 tsp baking powder
  • A pinch of salt
  • 1 Egg
  • 2 tbsp butter, melted
  • 1 cup coconut milk
  • Few drops of vanilla extract
  • Food colouring
  • Oil (for the filling)
  • For the filling:
  • 1 cup coconut flakes
  • 1 cup sugar cane

How to Make Coconut Pancake

  • 1.Add the dry ingredients (flour, baking powder and salt) into a mixing bowl and combine quickly, then make a well into the center and add in the egg, melted butter, coconut milk and vanilla essence.
  • 2.Mix the whole content to a smooth liquid pastry.
  • 3.At this point, you can make 3 equal batches of 1 base and leave one plain and color the 2 others with green and red/pink food coloring.
  • 4.Mix and crumble the sugar cane into the coconut flakes.
  • 5.Heat up a pan, and add about one ladle of pastry.
  • 6.The pancakes should be very thin so try to spread the pastry as good as possible by turning the pan before it starts to harden.
  • 7.Cover the pan and allow it to cook for 1-2 minutes. Take it off the heat (only cook on one side!) and repeat the process with the rest of the no colored and colored pastry.
  • 8.Place the pancake on a surface, cooked surface down and uncooked up. Add about 1 tablespoon of filling onto it.
  • 9.Now fold in a bit of the sides and slowly start to roll it up as shown. Repeat the process with the rest of the cooked pancakes and the remaining filling.
  • 10.Serve warm or cold.
