Crunchy Seviyan Chicken Recipe
Marinated chicken wrapped in spinach leaves and fried in a coating of flour, kasoori methi and vermicelli.

Ingredients of Crunchy Seviyan Chicken
- 4 chicken breasts- skinned and sliced horizontally
- For the marinade:
- 2 Tbsp lemon juice
- 2 tsp garlic paste
- 2 tsp oregano
- 1/2 tsp chilli powder
- 1 Tbsp oil
- For the filling:
- 4 blanched spinach leaves
- 4 Tbsp crumbled pepper
- 2 chopped green chillies
- 2 tsp diced onion
- Grated rind 1 lemon
- 2 Tbsp chopped coriander
- Salt and pepper
- For the coating:
- 2 Tbsp flour
- 2 eggs
- 2 tsp oil
- 2 tsp kasoori methi (dried fenugreek leaves)
- 4 Tbsp fine seviyan (vermicelli)
How to Make Crunchy Seviyan Chicken

Combine all the marinade ingredients.

Spoon over chicken and set aside for 2-3 hours.

Place spinach leaves over one half of chicken piece.
4.
Mix the remaining filling ingredients and spoon over the spinach leaf.
5.
Fold over chicken to seal.
6.
Coat with flour followed by egg, methi and seviyan.
7.
Shallow fry for about 5 minutes on each side.
8.
Serve hot with a salad.
