How to Make Curried Scallops
1.Make a spice mix with all the dry spices. Coat onto the shallots.
2.Cook the shallots with butter and basil.
3.Take juices left in pan and work into a fry of shallots, garlic and malt vinegar with heavy spices from the spice mixture. Work the cream at the end. Sieve the cream to make sure there are no bits in it.
4.Grate the potato and make a mix of refined flour and bread crumbs. Dip potatoes in this mixture, deep fry in oil till golden.
5.Slice the keri finely and saute in a pan with some oil, red chilli flakes, lemon juice, orange
6.juice and sugar.
7.Serve with a layer of scallops, cream and the fritters.
