Cabbage soaked in the flavors of garlic, ginger, soya sauce, vinegar and chilli flakes. Here's for you Kimchi Salad recipe, a Korean favorite.

Ingredients of Kimchi

  • 1 Kg Cabbage
  • 1 tbsp Salt
  • 2 tbsp Spring onions, finely chopped
  • 1 tbsp Garlic, finely chopped
  • 1 tbsp Ginger, finely chopped
  • 1 cup Soya sauce
  • 1 1/2 tsp Sugar
  • 1 cup White vinegar
  • 1 tbsp Chilli flakes
  • Sesame (til) oil

How to Make Kimchi

  • 1.Chop cabbage, place in a glass or steel bowl and sprinkle salt over it, and mix well.
  • 2.Leave it for 3-4 hours, till a little wilted.
  • 3.Squeeze a few times till cabbage has softened.
  • 4.Mix in the rest of the ingredients except the oil and transfer into sterilized jars.
  • 5.Seal and leave for 24 hours, before using.
  • 6.To serve garnish with some sesame oil.
