A smooth soup made with yogurt, a little flour and some boiled rice. Tempered with the freshness of mint. This Turkish yogurt soup is also known as 'Yayla Çorbas'.

Ingredients of Turkish Yogurt Soup

  • 1 cup yogurt
  • 3 Tbsp flour
  • 1 egg
  • Rock salt, to taste
  • Salt, to taste
  • 2 cups water
  • 1 Tbsp boiled rice
  • 1 tsp olive oil
  • 1 Tbsp chopped dry red bell pepper
  • A few fresh and dry mint leaves

How to Make Turkish Yogurt Soup

  • 1.Take a bowl and mix in flour, yogurt, salt, rock salt, egg and a little water. Keep aside.
  • 2.In a pan boil 2 cups of water and add the boiled rice. Pour in the yogurt mixture, stirring constantly to avoid any lumps.
  • For tempering:
  • 1.Saute dry red bell pepper, fresh mint leaves and dry mint leaves in a tsp of olive oil.
  • 2.Pour the tempering over the soup and serve.
