About Ulava Chaaru Recipe: Ulava chaaru is a traditional Andhra rasam made with horse gram (kulthi dal).
Ingredients of Ulava Chaaru
500 gms horse gram
4 litre water
50 gms oil
5 gram black mustard seeds
50 gms onions, finely chopped
10 gms green chillies, chopped
2 gram curry leaves
20 gms red chilli powder
100 gms tamarind (soak the tamarind in warm water and extract the pulp)
to taste salt
For the paste:
Make a fine paste of the following in a blender
50 gms onions
25 gms ginger
50 gms coriander seeds
25 gms garlic
10 gms cumin seeds
How to Make Ulava Chaaru
1.Wash and soak the horse gram overnight in water. Boil the lentils on a slow fire until soft. Strain and divide lentils into 2 portions, reserve stock for later use.
2.Discard half the lentils and blend the rest at high speed for 1 minute.
3.In a pan, heat oil and add the mustard seeds. When they crackle add the chopped onion, green chillies and the curry leaves.
4.Saute till the onions are golden brown. Add the paste and saute for another 2 minutes.
5.Mix in the rest of the ingredients. Add the stock and the lentil paste.
6.Cook on a slow flame for at least 15 minutes.
