Ingredients of Macchi ke Sooley
- 1 kg surmai steaks (Haddock)
- 1 tsp cumin seeds
- 1 tsp coriander seeds
- Burnt garlic
- Burnt onions
- 1 tsp turmeric powder
- 1 tsp red chilly powder
- Sea salt, to taste
- 1 tsp dry ginger powder
- Coriander leaves
- Lemon juice
- Ghee
- 1 tsp dry mango powder
- 3 - 4 green chillies

Preheat the oven

In a pan, dry roast the cumin seeds and the coriander seeds and then pound in a mortar and pestle.

Add burnt garlic and burnt onion and grind further.

Add turmeric powder, red chilly powder, sea salt, dry ginger powder, dry mango powder, 3 - 4 green chillies, chopped coriander stems, lemon juice, clarified butter, water and grind further till it becomes a fine paste.

Marinate the fish in this paste.

In a roasting pan, put a spoon of clarified butter and brush the bottom of the roasting tin

Place the fish side by side, and put it in a pre heated oven of 160 degrees for 10 minutes till its nice and crispy from outside.

Garnish with fresh coriander leaves and lime juice and serve hot.
