Making keto coconut rice is very easy. Grate cauliflower and dry roast it till crunchy. Also, dry roast some peanuts and keep both aside. Then saute cumin seeds, mustard seeds, whole red chillies, urad dal, green chillies and curry leaves, and add roasted cauliflower and peanuts to the spices.
