Spicy Malvani Chicken Curry

  • Chicken cooked in coconut gravy and a spicy malvani masala. A stimulating chicken curry made malvani style.


  • 1 kg chicken, cut into medium sized pieces

  • For the curry:
  • 80 ml of water
  • 3 Tbsp of refined oil
  • 3 onions, finely chopped
  • A handful of grated coconut
  • A handful of coriander leaves

  • For the malvani masala:
  • 1 bay leaf
  • 1/2 nutmeg
  • 6-7 cloves
  • 6-7 dry red chillies
  • 10 black peppercorns
  • 1 large cinnamon stick
  • 1 tsp cumin seeds
  • 1 tsp coriander seeds
  • 1 tsp red chilli powder
  • 1/2 tsp turmeric powder

  • For the coconut masala paste:
  • 3 green chillies
  • 5-6 garlic cloves
  • 1 grated coconut
  • 3/4th inch of ginger


  1. Dry roast all the ingredients of the Malvani masala in a pan and coarsely grind them.
  2. Then grind all the ingredients of the coconut masala into a paste.
  3. In a kadhai, heat oil, add the onions and the ground coconut masala.
  4. Stir and cook for about 10 minutes.
  5. Add 3-4 tsp of the ground Malavani masala, red chilly power and salt to taste.
  6. Mix in the chicken and then water.
  7. Cover and let it cook on low flame for about 40 mins till the gravy thickens and the chicken is tender.
  8. Garnish with chopped coriander leaves and grated coconut.
  9. Serve hot.

This turns out a white colour. There's no mention of tomatoes or passages. What makes the colour?

There is nothing in the recipe to make a red colour. The sauce is a white colour. I added passata.

i wish i had read the comments before wasting time and money on this recipe. The instructions and amounts dont make sense or lead to anything resembling the curry in the picture.
