There are a few recipes in Indian cuisine that have been declared as the perfect accompaniment for plain rice or spiced rice. Rajma, dal, chane and kadhi are immensely enjoyed with rice. Kadhi is one of our favourites - it is a curd-based dish, usually made with fried besan pakoda. Here is another version of kadhi carrying the same sourness of curd gravy but adding in the mushiness of boiled potatoes. Mashed potatoes are added instead of fried pakoda to double it up as a bowl of warm and comforting potato soup.
So, you can pair aloo kadhi with rice or Indian breads or just have it as a soup. Let us share with you that this kadhi goes best with fried pooris with a side of chutney or pickle. Aloo kadhi or potato soup can be made in under 30 minutes with few, simple ingredients.
The recipe video by food vlogger, Manjula Jain, was posted on her YouTube channel 'Manjula's Kitchen'. You'll be surprised to see how easy it is to make this kadhi. Not extra time and effort needed to make kadhi pakodis. Just make a batter of mashed potatoes, curd and spices and add it to the curd gravy, which is flavoured with spices like bay leaves, cumin seeds, fenugreek seeds and ginger. Also, some all-purpose flour is added to thicken the gravy.
Potato soup is light, mildly flavoured and oh-so-yummy. You must try this unique kadhi recipe with healthier boiled potatoes.
