How To Make Mango Curd Rice For Weight Loss
Chef Simone Kathuria shared the recipe for mango curd rice for weight loss on her Instagram page. In the video, she starts preparing the yogurt base in a large bowl. Whisk until smooth before adding vegetables - grated carrot, beetroot, cucumber - and mango. Mix all the ingredients well. Add other spices for seasoning - salt, pepper, cumin, and grated ginger. Combine all the ingredients and let it sit aside. Now add cooked rice to the mixture and mix gently.
Meanwhile, take a small pan and heat the oil in it. Add mustard seeds, chana dal, urad dal, peanuts, and curry leaves in the oil. Saute the ingredients until they start spluttering and are golden brown. Add this tempering to the rice mixture and top it with chopped coriander and chilli. Mix well and refrigerate for some time. Serve chilled!
Important Points To Remember While Making Curd Rice At Home
If this is your first time making curd rice at home or you just want to brush up your skills on this easy summer recipe, then there are certain points that you should keep in mind.
1. Overcook The Rice
Curd rice uses a variety of rice that is smaller in size. If you don't have small-grain rice, fret not. You can use any variety of rice for the same. All you have to do is overcook the rice a bit more than usual, which will give it a mushy texture, making it easier for you to mix the ingredients in it.
2. Use Freshly Cooked Rice
Curd rice tastes best when made with freshly cooked rice. Leftover rice usually turns harder and ruins the texture of the dish. However, if you do use leftover rice, make sure to reinstate its moisture by reheating it with some water and then using it for the recipe.
3. Avoid Using Hot Rice
Make sure not to use hot rice while making curd rice. Adding curd to hot rice will make the yogurt coagulate and separate the whey. This will prevent you from getting the desired texture of your curd rice. So, cool down the rice before using it in the recipe.
4. Add Ingredients To Aid Digestion
Adding a pinch of hing or grated ginger in the tempering enhances the digestive benefits of curd rice. It will instantly enhance the flavour of your meal and make it wholesome.
