Aubergine Salad Recipe
Delectable aubergine salad served with a crisp toast with an onion paste spread.

Ingredients of Aubergine Salad
- 250 gm long aubergines
- 1 Tbsp oil
- 1 Tbsp coarsely chopped garlic
- 1 tomato - peeled, deseeded and diced
- 2 Tbsp lime juice
- 1 tsp grated jaggery
- 2 Tbsp fish sauce
- 1 hard boiled egg - chopped
- 2 onions - sliced into rings
- 2 sliced green chillies
- Coriander leaves to garnish
- For onion bread:
- 1 tsp browned onion paste
- 2 tbsp butter coarsely ground black pepper
- 1/2 tsp paprika
- 6 slices of crisp bread
- Sprinkling of crushed rock salt
How to Make Aubergine Salad

Roast aubergines until tender. Peel away skin and slice.

Heat oil, add garlic and allow it to color. Stir in tomatoes. Cook for 30 seconds. Set aside.

Whisk together lime juice, jaggery and sauce for the dressing.
To serve:
1.
Arrange aubergines on a plate. Top with tomato, garlic, egg and onion rings.
2.
Drizzle with dressing.
3.
Garnish with chillies and coriander and serve with brown onion bread.
For Onion Bread:
1.
Combine the ingredients. Spread thinly over slices of bread.
2.
Finish with a sprinkling of rock salt.
3.
Serve with the salad.
