Marinated Stuffed Peppers

Bell peppers, tomatoes and aubergine, stuffed with herbs and added zests.

Ingredients of Marinated Stuffed Peppers

  • 4 bell peppers
  • 4 medium tomatoes halved
  • 100 gm diced aubergine
  • 1 cucumber, peeled, de-seeded, blanched
  • 100 gm chopped mushroom
  • For the marinade:
  • 2 tsp crushed garlic
  • 1 Tbsp chopped garden herbs
  • 1/2 tsp oregano
  • 60 ml vegetable stock
  • 100 ml olive/salad oil
  • 1 Tbsp lemon juice
  • 1 tsp prepared mustard

How to Make Marinated Stuffed Peppers

  • 1.Cut the peppers in half crossways. Remove seeds and pith. Scoop out the seeds from the tomatoes, sprinkle with salt and leave upside down to drain for 20 minutes.
  • 2.Place a tomato half inside each pepper half.
  • 3.Toss the mushrooms, cucumber and aubergines together.
  • 4.Season and fill it in the cavity of the tomatoes.
  • 5.Mix all the marinade ingredients and whisk.
  • 6.Place the stuffed peppers in a dish and pour the marinade. Set aside for 1 hour.
  • 7.Bake for 20 minutes. Garnish with chopped parsley and serve hot.
