This royal dish is prepared using guchchi, cooked in ghee and bathed in a miscellany of spices and tomatoes.

Ingredients of Shahi Guchchi

  • 250 gm khoya- crumbled
  • 2 Tbsp ghee
  • 1 tsp cumin seeds
  • 1 cup tomato- freshly pureed
  • 1 tsp ginger paste
  • 1 tsp kashmiri chilli powder
  • 1 1/2 tsp salt
  • 100 gm guchchi- soaked and rinsed well
  • 1 tsp garam masala
  • Coriander for garnishing

How to Make Shahi Guchchi

  • 1.1. Rinse guchchis well to remove grit.
  • 2.2. Squeeze well to remove extra water.
  • 3.3. Heat ghee and add cumin seeds.
  • 4.4. When seeds splutter, add tomato and ginger and saute till the fat separates.
  • 5.5. Add guchchis and sauté for 3-4 minutes.
  • 6.6. Then add salt, chilli powder, turmeric and cook till tender.
  • 7.7. Add khoya and cook till well mixed.
  • 8.8. Serve garnished with the garam masala and coriander.
