An authentic Maharashtrian dish, full of vegetables, high on desi masalas. Best enjoyed with any Indian bread.

Ingredients of Ussal Pav

  • 1 medium sized onion- chopped
  • 1 pod of garlic
  • 1/2
  • 1 Tbsp badishap (fennel seeds)
  • 2 Tbsp coriander seeds
  • 1 Tbsp zeera
  • 6-7 cloves
  • 5-6 pepper corns
  • 1/2 bada elaichi
  • 1 green elaichi
  • 1
  • 3 red chillies
  • 1 Tbsp dry coconut
  • 1 cup dry white peas- soaked for 8 hours

How to Make Ussal Pav

  • 1.Heat oil in a pan
  • 2.Saute onions till brown and keep aside.
  • 3.Roast all dry ingredients till brown.
  • 4.Mix ginger, garlic, sauteed onions and roasted ingredients together.
  • 5.Grind them to a fine paste.
  • 6.Cook dry peas in a pressure cooker.
  • 7.Heat oil in a kadahi.
  • 8.Add crushed garlic and curry leaves.
  • 9.Fry till garlic becomes brown.
  • 10.Add ground paste and fry till oil shows up.
  • 11.Add tomatoes and keep frying.
  • 12.Finish with boiled peas and salt.
  • 13.Cook till done.
  • 14.Ready to serve.
