What Is So Special About Butterfly Chicken?
This Indianized version of butterfly chicken is easy to make and loved by kids and adults alike. This recipe does not require any over-the-top ingredients and can even be made by a beginner-level cook. It is versatile so the spice levels of chicken can be adjusted. Butterfly chicken makes for an excellent snack at kids' parties or soirees. It can easily be made with leftover ingredients from your New Year's Eve party leftovers and served as an evening snack for your kids.
How To Make Butterfly Chicken At Home: Recipe To Make Butterfly Chicken
In a big bowl, take chicken pieces and marinate them with ginger-garlic paste and spices - red chilli powder, chaat, salt, and pepper. To this, add eggs, soy sauce, red chilli sauce, red chilli paste, vinegar, cornflour, and maida. Mix it well with the chicken pieces so that they are well-coated. Cover the bowl with a lid and keep it aside for 3-4 hours to marinate.
In the meantime, slice medium-sized potatoes into thin layers and rinse them. Now take two tablespoons of cornflour and add water to it to make it a slurry. Add the sliced potato pieces to the cornflour slurry and let them soak for 10 minutes. After the potato slices have been soaked, take them out. Now take one slice, gently place the marinated chicken in between, fold it and keep it together by inserting a toothpick in between.
Repeat the same process with other chicken pieces and potato slices. Make sure the toothpick holds the meat and vegetables properly and does not just pierce them. In a frying pan, heat some oil or ghee on a high flame. After the oil has become hot, reduce the flame and gently place the butterfly chicken in it. Deep fry the butterfly chicken until it's crisp to perfection. Garnish with sesame seeds and voila! Your butterfly chicken is ready to serve!

Bonus Tip:
Since this recipe has high spice levels, you can serve it with mint mayonnaise or a yoghurt-based dip to balance its taste. If you are preparing this dish for your kids, avoid putting red chilli sauce and paste in the chicken marination. Instead, you can replace these with tomato ketchup. If you don't want to deep fry this recipe, you can also use an air fryer for the same. Just place the uncooked butterfly chicken pieces on the air fryer tray and flip it after 15 minutes till the ingredients are crisp.
