Most of our summer afternoons during childhood were spent waiting to hear the bells chime of kulfi cart strolling down our street. Times have changed now, and the kulfi carts have been replaced by restaurant delivery bikes. But, there's something about 'desi' malai kulfi that no other modern-day dessert can do to please our sweet tooth. To recreate that same joy of eating that rich, milky kufi on a stick, let's make it at home with the help of this recipe video. You'll be surprised to see how easy it is to make malai kulfi at home, this one replete with the goodness of pista and kesar.
The recipe video from YouTube channel 'Cooking With Reshu' demonstrates how to make kesar pista malai kulfi in few simple steps. Boil full cream milk on high flame and turn down the flame and let it simmer till it turns dense, into a malai form. Add Pistachios (pista), almonds (badam), cashews (kaju) cardamom (elaichi), saffron (kesar) and sugar. Pour the mixture in kulfi moulds and freeze it. You can garnish the kulfi with more dry fruits if you want to.
This kesar pista kulfi is the ultimate summer heat quencher that you can make in in a large quantity and have one every day when nostalgia kicks in. Your kids are sure to love this kulfi and won't crave for doughnuts and ice-creams that you won't be able to get them during the lockdown against Coronavirus.
