A quick and easy Kerala-lite delicacy which is an integral part of Onam festivities. This version is made with carrots.

Ingredients of Carrot Payasam
- 3 carrots
- 1 litre milk
- 2 cups sugar
- 2 tsp ghee(clarified butter)
- 1/4 cup raisins and cashews

Peel, chop and steam carrots in pressure cooker
Grind the steamed carrots into a fine paste.
Heat 1/2 tsp of ghee in a heavy bottomed vessel.
Add the ground carrot and fry for 3-4 minutes on medium heat.
Add the milk and allow it to boil.
Then keep stirring till it gets reduced to half the quantity.
Add sugar and cook further till sugar is completely dissolved.
Switch off the stove.
In another pan, heat the remaining ghee and fry the raisins and cashew nuts.
Garnish the payasam with the fried dry fruits.
Serve hot or cold, as desired.
