A quick and easy Kerala-lite delicacy which is an integral part of Onam festivities. This version is made with carrots.

Ingredients of Carrot Payasam

  • 3 carrots
  • 1 litre milk
  • 2 cups sugar
  • 2 tsp ghee(clarified butter)
  • 1/4 cup raisins and cashews

How to Make Carrot Payasam

  • 1.Peel, chop and steam carrots in pressure cooker
  • 2.Grind the steamed carrots into a fine paste.
  • 3.Heat 1/2 tsp of ghee in a heavy bottomed vessel.
  • 4.Add the ground carrot and fry for 3-4 minutes on medium heat.
  • 5.Add the milk and allow it to boil.
  • 6.Then keep stirring till it gets reduced to half the quantity.
  • 7.Add sugar and cook further till sugar is completely dissolved.
  • 8.Switch off the stove.
  • 9.In another pan, heat the remaining ghee and fry the raisins and cashew nuts.
  • 10.Garnish the payasam with the fried dry fruits.
  • 11.Serve hot or cold, as desired.
