About Pan seared Lamb Chops in Malvani Masala Recipe: Lamb chops marinated in an Indian flavors of a malvani masala, served with a chunky vegetable salad.
Ingredients of Pan seared Lamb Chops in Malvani Masala
250-300 gms lamb chops
For Malvani Gowda Masala:
1-2 tsp cloves
1-2 tsp cinnamon
1-2 tsp black pepper
1-2 tsp white pepper
1-2 tsp fennel seeds
1-2 tsp coriander seeds
1-2 tsp copra
For the Lamb Chops:
5 gms butter
1 1/2 tsp malvani gowda masala
3-4 rosemary leaves (crushed)
2-3 thyme leaves (crushed)
2 cups lambjus (lamb stock)
1 1/2 tbsp olive oil
black pepper (to season)
to taste salt
For Salad:
25 gms zucchini, sliced
25 gms carrots, sliced
25 gms capsicum, sliced
25 gms fresh soya beans / beans
10-15 ml verijus / grape juice
10-15 ml olive oil
1 tsp maple syrup / honey
salt and pepper (to season)
How to Make Pan seared Lamb Chops in Malvani Masala
1.In a bowl, add cloves, cinnamon, black pepper, white pepper, fennel seeds, coriander seeds, copra and mix all together.
2.In another bowl, put the malvani gowda masala, rosemary leaves, thyme leaves, olive oil and mix all together. Now add salt and pepper and marinate the lamb chops in this mixture.
3.On a hot pan, pan sear the lamb chops for 3-4 minutes on both sides till light brown and cover it.
4.Now, in the bowl with the marinade mixture, add the lambjus (lamb stock) and whisk together.
5.In another bowl, mix zucchini, carrots, red onions, capsicum, and fresh soya beans / beans and give all a toss.
6.Now, season it with salt, pepper, verijus / grape juice, olive oil and maple syrup / honey and mix all well.
7.Now add the lambjus and gowda masala sauce to the lamb chops. Add butter and cook for 1-2 minutes.
8.On a plate, place the salad in the centre and add the lamb chops onto the salad.
