Ingredients of Varki Paratha

  • 1 1/2 Cup whole wheat flour
  • 1 1/2 cup semolina (soaked)
  • to taste salt
  • 1 cup milk
  • Dry flour (for rolling)
  • Ghee (as required)

How to Make Varki Paratha

  • 1.Soak the semolina in water till it loses its grainy texture.
  • 2.Mix with a little milk, the flour, semolina and salt; make into a dough. Keep it aside for 10 minutes, covered.
  • 3.Now roll out the dough on a lightly floured surface, flatten. Apple some ghee over it and roll one end to two-thirds of it, fold the other end. Repeat it thrice. Refrigerate the folded dough for 10 minutes.
  • 4.Now flatten the layered dough and place it over hot griddle to cook.
  • 5.As soon as the edges start rising and you notice a few bubbles beginning to form on the surface, smear it with a generous helping of ghee, letting it flow around and under the paranthas.
  • 6.Cook till the underside is brown, flip over and cook on the other side till brown. Take off the griddle and serve hot.
