In a pot take 500ml water and bring it to a boil. Add coriander leaves and the juice of 1 lemon and poach the prawns in it.
In a glass bowl diced the kiwi fruit, papaya, melons and some spring onions.
Scoop out the flesh of a coconut into a processor and add some sweet chilly sauce and blend well to make a fine puree.
Mix the puree into the bowl of fruits and dice in some of the poached prawns to the salsa.
Serve in martini glasses and garnish with basil leaves.
