Prawns cooked in lemon juice and water, served with fruit and coconut salsa.

Ingredients of Poached Prawns in Tropical Fruit Salsa

  • 3 - 4 prawns
  • 1 coconut
  • 1 kiwi fruit
  • 1 small papaya
  • Musk melon
  • Salt & pepper to taste
  • Basil leaves to garnish
  • 2 Tbsp sweet chilly sauce
  • 1 coriander leaves
  • Juice of 1 lemon
  • 500 ml water

How to Make Poached Prawns in Tropical Fruit Salsa

1.In a pot take 500ml water and bring it to a boil. Add coriander leaves and the juice of 1 lemon and poach the prawns in it.
2.In a glass bowl diced the kiwi fruit, papaya, melons and some spring onions.
3.Scoop out the flesh of a coconut into a processor and add some sweet chilly sauce and blend well to make a fine puree.
4.Mix the puree into the bowl of fruits and dice in some of the poached prawns to the salsa.
5.Serve in martini glasses and garnish with basil leaves.
