Roast Chicken, Potato Mash and Black Tomato Salad

Chicken roasted with garlic, thyme and rosemary. Served with fluffy mashed potatoes and tomato salad with balsamic vinegar.

Ingredients

  • For Roast Chicken:
  • 1 whole chicken
  • 1 bulb of onion
  • 1 bulb of garlic
  • 1 lemon with incisions on it
  • 50 grams butter
  • 6 sprigs of thyme
  • 6 sprigs of rosemary
  • Salt and pepper

  • For Baste:
  • 2 Tbsp olive oil
  • Salt and pepper

  • For Potato Mash:
  • 4 potatoes
  • 1/4 cup of milk
  • 100 grams butter
  • Salt
  • Pepper

  • For Black Tomato Salad:
  • 2 Tbsp of balsamic vinegar
  • 5 Tbsp of olive oil
  • Small cubes of toasted bread
  • Tomatoes
  • Red onions
  • Garlic
  • Basil

Method

  1. For Roast Chicken:
  2. Place the chicken on a baking tray.
  3. Sprinkle some olive oil, salt, pepper and massage it.
  4. In the cavity of chicken insert onion, thyme, rosemary and half a lemon.
  5. Add garlic thyme and rosemary to the chicken.
  6. Massage some butter all over the chicken.
  7. Roast it into the oven for an hour and a half at 200 degree Celsius.

  8. For Potato Mash:
  9. Put some parboiled potatoes in a tray and mash.
  10. Add hot milk and cold butter to the mash.
  11. Stir continuously until frothy, and add salt and pepper.

  12. For Black Tomato Salad:

    Into a bowl add balsamic vinegar, olive oil, bread cubes, tomatoes, onions, chopped garlic and basil leaves.
  13. Toss all the ingredients together.
  14. Add leftover chicken stalk while serving.
