Cooked duck breast, orange segments, carrots, cucumber, chillies rolled in rice paper to make some delicious spring rolls. Served with a tangy orange sauce.

Ingredients of Duck Spring Roll

  • Sugar syrup
  • A dash of vinegar
  • A dash of lemon
  • 1 carrot, julienne
  • 2 duck breast pieces
  • 1 tsp soy
  • 1/2 tsp ginger
  • 1/2 tsp salt
  • Some chopped onions
  • 1/2 tsp garlic
  • Sesame oil
  • Plum sauce, optional
  • 1 orange, cut into segments
  • 1/2 cucumber, julienne
  • 1/2 bell pepper, julienne
  • 1 spring onion, julienne
  • 4 rice paper wraps, cooked
  • For the sauce:
  • 1 orange, juice
  • 1/2 cup of sugar syrup with vinegar and lime juice
  • 1 tsp fish sauce
  • 1 Tbsp lemon juice
  • 1/2 tsp garlic
  • 1/4 tsp chilly powder
  • Coriander leaves, chopped

How to Make Duck Spring Roll

1.Boil the sugar syrup, vinegar and lemon juice togethar.
2.Pour this over the julienne carrots.
3.Now, cook the duck breast pieces in a pressure cooker with soy, ginger, onions and garlic.
4.Once the meat is cooked, lightly pan fry it with the same ingredients in sesame oil. Here you can throw in your favorites like maybe plum sauce or anything to make it more flavorful and then shred it to cut it firmly.
5.Now the rice paper wraps are already cooked so just soak them in water and then put it out on a damp cloth, nice and smooth.
6.Now top the wrap with some carrots, cucumber, bell peppers, the duck pieces, orange segments, spring onions and wrap up the roll.
7.Now mix all the ingredients to make the sauce. Top it up with some fresh coriander.
