In a pan heat some olive oil. Melt the butter and fry the baby shallots.
Grate in some cheese and stir till light brown. Add chopped mushrooms and stir.
Add the prawns and mix with the wine and brandy. Saute it and add the cream. Transfer to a baking dish.
Grate some parmesan and gruyere cheese and set to bake at 180 degrees for 10 minutes.
Take out and garnish with coriander and serve.
