Rawas With Ginger Lemon Sauce

  • Lovely and delicate rawas fish fillets marinated in a coriander marinade and pan seared. Drizzled with some ginger lemon sauce.


  • 2 fillets of rawas

  • For the marinade:
  • 1 cup coriander
  • 2-3 stems chopped chives
  • Salt and pepper, to taste
  • 1 tsp olive oil
  • Juice of 1/2 lemon
  • 2 Tbsp olive oil, to pan sear fish

  • For the ginger and lemon sauce:
  • 1 tsp olive oil
  • 1 onion, chopped
  • 1 tsp ginger, grated
  • Black pepper, to taste
  • 1 tsp lemon juice
  • 20-30 ml white wine
  • 1 Tbsp cream
  • Salt, to taste
  • Butter
  • Parsley


  1. For the marinade:
  2. Mix all the ingredients together and blend them in a mixie.

  3. For the ginger and lemon sauce:
  4. In a pan add olive oil, chopped onions, garlic and ginger. Saute.
  5. Add the black pepper, lemon juice, white wine, cream and salt. Let the sauce reduce for 2-3 minutes.
  6. Add a knob of butter and some parsley. Let it cool.
  7. Smoothen the sauce with a blender.

  8. For the fish:
  9. Clean and wash the fillets.
  10. Rub it with some salt and pepper.
  11. Apply paste (marinade) to both the fillets (Like to make a sandwich).
  12. Wrap in cling film and keep in the fridge for 20 minutes.
  13. Unwrap the fish and pan sear it from both sides for 2-3 minutes each.
  14. Drizzle some sauce over these fillets.
  15. Serve with some stir fried Asian greens.
