Curried Eggs with Grilled Vegetables

  • Boiled eggs cooked in the flavor and aroma of various masalas. Serve with some grilled veggies and a bowl of light lettuce salad.


  • For the Egg Curry:
  • 2 onions, chopped
  • 4 eggs, boiled and shelled
  • 2 Tbsp olive oil
  • 1 chilly, cut into small pieces
  • 1/2 tsp cumin powder
  • 1/2 tsp coriander powder
  • 1/2 tsp turmeric
  • A hint of chilli powder or to taste
  • Salt to taste
  • For the Grilled Vegetables:

    100 gm mushrooms
  • 2 tomatoes
  • Some herbs (basil, oregano, thyme)
  • A pinch of salt
  • Peppercorns, grounded
  • 2 Tbsp olive oil

  • For the Salad:
  • 1/2 cup oil
  • 1 cup honey
  • 1/2 tsp peppercorns
  • 1 chilly, chopped
  • 1 tsp malt or white wine vinegar
  • 1 bowl of lettuce leaves


  1. For the Egg Curry:

    Heat the oil in a pan and fry the onions.
  2. Tip in the chillies.
  3. Quarter the eggs.
  4. Add the cumin powder, coriander, turmeric, chilli powder, salt to the onions and give it a quick stir.
  5. Now tip in the eggs.
  6. Fold them in the masalas very carefully.
  7. Serve hot.

  8. For the Grilled Vegetables:
  9. Slice the tomatoes.
  10. Place the tomatoes and the mushrooms in a flat grilling dish
  11. Sprinkle the herbs, peppercorns an salt over the veggies.
  12. Drizzle some olive oil. Now place this under the grill for about 10-15 minutes.

  13. For the Salad:
  14. Add the oil, honey, peppercorns, chillies and mix together.
  15. Add the vinegar to it.
  16. Add this dressing to the lettuce leafs
