Strawberry Flan

  • Short crust pastry filled with the goodness of strawberries. This tasty recipe is beautiful to look at and great for brunch.


  • Pastry:
  • 100 gm flour
  • 50 gm butter
  • 50 gm castor sugar
  • 2 egg yolks
  • 1/4 tsp vanilla essence
  • 5 egg yolks
  • 150 gm castor sugar
  • 2 1/4 Tbsp flour
  • 350 ml boiling milk
  • 1/2 tsp vanilla essence

  • Topping
  • 1/2 kg sliced strawberries
  • Strawberry jelly to glaze


  1. For the pastry:
  2. Sieve flour into a ring. Place butter, sugar, yolks and essence in the center.
  3. Blend the ingredients together. Gradually work in the flour and knead into dough.
  4. Cover and chill. Roll out into a 6"flan ring. Bake the flan in a moderate oven at 180 degrees C for 15 minutes.

  5. For the filling:
  6. Beat yolks and sugar together. Stir in flour. Pour boiling milk over egg mixture.
  7. Return to pan. Thicken over a gentle heat. Stir in essence. Cool.
  8. Spoon filling into flan, cover with strawberries and glaze with jelly. Serve chilled.
