For the pastry:
Sieve flour into a ring. Place butter, sugar, yolks and essence in the center.
Blend the ingredients together. Gradually work in the flour and knead into dough.
Cover and chill. Roll out into a 6"flan ring. Bake the flan in a moderate oven at 180 degrees C for 15 minutes.
For the filling:
Beat yolks and sugar together. Stir in flour. Pour boiling milk over egg mixture.
Return to pan. Thicken over a gentle heat. Stir in essence. Cool.
Spoon filling into flan, cover with strawberries and glaze with jelly. Serve chilled.
